“Sang de Pigeon (pigeon’s blood) is a nod to my former life as a jewellery valuer. It’s the trade term for the finest rubies, invariably from the Mogok Stone Tract in Myanmar. The precious grapes for this Pinot Noir were grown in the elevated vineyards of South Australia’s Adelaide Hills.
Grown at Kangaroo Creek in Lenswood. Low winter rains were followed by a warm and dry growing season, echoing the 2019 vintage and prompting an early harvest. Hand-picked on the 1st and 7th of March, fermented in open fermenters, 38% whole bunch, pressed to barrel and matured for 11 months in French oak (12.5% new, Francois Frères).” Michael Hall
